More than 1000 products accompanied by a detailed menu of producers. At the Regional Wine Bar, you only have the embarassment of choosing between the 17 DOP and the 9 IGP (among recognised and phases of recognition) and the 340 traditional products censored in Lazio. Beginning with the cheeses: from Burrell' alla Caciotta of Tuscia and genuine Roman Caciotta, from Marzolino sheep cheese in oil, to the Picinisco Pecorino cheese, from the renowned Roman Pecorino to the Buffalo Mozzarella, from Viterbo Ricotta to the Roman Ricotta.

And then the cured meats: beef in oil, the Coppa Viterbese (or coppa della Tuscia), the Amatrice Mortadella – Accumoli, Lazio pork roast (Ariccia, Viterbo, Poggio Bustone), Bassiano and Guarcino ham, Monte San Biagio sausage in oil with lard, to name a few. A researched proposal of territory, from legumes to honey, from products that rediscover the biodiversity in some regional areas to the fish in treated lakes, following ancient and wise recipes, up to bread and sweets.

DOP Products

DOP is an acronym for Denomination of protected origins, and indicates an agro-food product originating from a specific region, place or town. The quatlity and the characteristics of the DOP product derive from a geographic environment (naturally manufactured and human). The whole productive cycle of a DOP, that is, production, transformation and packaging, comes from a restricted geographic area.

IGP Products

IGP stands for Indication of Protected Geography. It indicates that a agri-food product comes from a geographic area in which quality, reputation, or other characteristics, could be attributed to where it is from, and in which the production and/or transformation and/or elaboration take place in the determined geographic area.

The difference, with regards to DOP, for which all the qualities and characteristics are due to the geographic environment, is that for an IGP product, reference is made to its quality or characteristic.

In the first case, the production, transformation and the elaboration of the product must come from the determined geographic area; secondly, however, one talks of production and/or transformation, and/or elaboration. That is, it is enough to obtain an IGP in one phase of the process (capable to attribute determined quality or character of merit to the product) that happens in the established zone.

IGT Products

IGT signifies Indication for Typical Geography. It indicates wines from a wide geographic area, in which the geographic name is utilised to designate the product from which it comes from. The disciplines that regulate the product are less restrictive than the ones before.

STG (Traditional Specialty Guaranteed)

Acknowledgement by the community with regards to Reg. CE 509/06 that is attributed to an agricultural and food product which does not make reference to geographic origins, but to its composition or method of traditional production.

DOC Products

DOC is a sign that signifies the Denomination of the Controlled Origins. It indicates wines from a grape growing area, whose geographic name is used to designate the quality of the product, regulated by production controllers that impose the vines to be used, the zone specific to production, the way in which to cultivate, and other characteristics that unequivocally identifies the product. DOCG is recognition of particular merit attributed to DOC wines of national and international notoriety.

DOCG (Denomination of controlled origin and guarantee)

It is a mark of origin that certifies the origin and the quality of the wine. For denomination of origin of the wine it signifies the geographic name of a grape growing zone; it is used for designating a renowned quality product, whose characteristics are connected to the natural environment and human factors.

The DOCG category of wine is comprised of wines produced in a determined geographic zone with regards to a specific rule of production (approved by the Ministerial Decree). The DOCG is reserved for wines that are already recognised and checked (DOC) of at least five years and are held in particular merit, with respect on average to those similar wines classified in this way, due to the incidence of natural, human and historical factors that gained prestige and economic value on both a national and international level.

Tradictional Products

A food and agricultural product can be defined as "Traditional", according to DM 350/99, so when "the working methods, conservation, seasonal, result in being consolidated over time. For the individualisation of the agri-food products of the region, the provinces autonomous of Trento and Bolzano assure that the above-mentioned products are practiced on their own property in an homogeneous way and according to the traditional rules for a period not less than 25 years.

The traditional products are included in the regional lists in which gives access to the dispensation of hygienic-sanitary materials so that to "always assure a state of hygiene and disinfection of the contact materials and the places in which productive activities are developed. All this to safeguard the typical characteristics, salubriousness and security of the product, in particular the necessity to preserve its specific flora.

The brand "Natura in Campo" – Products of the parks of Lazio

The brand identifies the agri-food products that come from the protected natural areas of the Lazio Region, applying a discipline that foresees its concessions of use, of effectual controls and eventual sanctions. Through the Institution of the brand Natura in Campo, the Lazio region intends to pursue the following objectives:

a) promote forms of collaboration and partnership among the corporate body managers of the natural protected areas of Lazio and the producers who operate in the same areas according to the criteria of sustaining the environment;

b) to stimulate and qualify the production of good agri-foods with methods compatible to the characteristics of the territories within the protected natural areas and with their conservation demands;

c) promote the commercialisation and the consumption of biological products, typical and traditional places, contributing to the conservation of biodiversity within the protected natural areas;

d) promote entrepreneurs and employment within the protected natural areas favouring the knowledge of the local productions near local, national and international consumers;

e) promote studies and evaluation of sustainable productive activity.

Presidio Slow Food

Slow Food is an international non-profit association established in Italy in 1986 which promotes the right to pleasure, defends and divulges the tradition of agriculture and gastronomy worldwide. Slow Food, through projects (Presidia), publications, events and demonstrations such as, the Tasting Room, Cheese, Slow Fish defends biodiversity, people’s food rights and it fights against the homologation of tastes, massive agriculture, genetic manipulation.

The Presidia sustain the small excellent productions that are at risk of disappearing, they evaluate territories, recover works and traditional work techniques, they save autochthonous races from extinction and ancient varieties of vegetables and fruit.

The Presidia directly involve the producers, offer assistance to improve the quality of products, facilitate exchanges between diverse countries and seek new market results (local and international). In the Lazio region there are four Slow Food Presidia: Onano Lentils, Marzolina, Monte San Biagio sausage and Caciofiore in the Roman Countryside.
