Palatium’s extraordinary chef, Severino Gaiezza, has delighted Romans and visitors, who visit the local wine bar situated in Via Frattini, for more than three years. Inside Palatium, Gaiezza can arrange the best typical and traditional products of the Lazio region, all strictly certified, with which the classic recipes of traditional Roman and Lazio gastronomy are conceived, that are interpreted by him in an harmonious and balanced way.
