For those who want to deepen their knowledge of our agri-food culture, the wine bar’s cuisine, a vision conceived according to the criteria of modern restoration, suggests traditional recipes and dishes, made with high quality raw materials, that, thanks to its descriptive menu, become an invitaion to a true and real journey through the diverse territories of Lazio, rich in history, culture and age-old customs.

Palatium’s extraordinary chef, Severino Gaiezza, has delighted Romans and visitors, who visit the local wine bar situated in Via Frattini, for more than three years. Inside Palatium, Gaiezza can arrange the best typical and traditional products of the Lazio region, all strictly certified, with which the classic recipes of traditional Roman and Lazio gastronomy are conceived, that are interpreted by him in an harmonious and balanced way. The exceptional knowledge of raw materials and his cooking abilities gives each unique dish a way to satisfy even the most demanding palates.
