TINCA MEATBALLS FROM LAKE BOLSENA STEAMED IN A STEW WITH GAETA OLIVES
Tinca is a tender and very tasty fish, it belongs to the Cyprinidae family, together with carp, barbel, chondrostoma, that is disliked because it resides in slimy waters, in some lakes, which is not clear like our Lake Bolsena, it acquires an unpleasant taste of mud. In any case not everyone agrees with this negative opinion, and overall the tinca does not agree, as it is noted in the famous saying “said the tinca to the pike, my head is worth more than all your body”. We of course do not share in this affirmation, more so its head contains organs that gives this fish a bad taste, that, according to the fisherman of Lake Bolsena, should be the last two teeth (or vesicles), that are always removed to take away this bitter taste.

LATTARINI FROM LAKE BOLSENA MARINATED IN SOUSED FISH
Lattarini are very small fish found in lakes and lagoons, but also along the coast and ports. The ideal habitat remains the brackish water, but now the lattarini are stable in almost all the lakes of Italy. They live and move in big banks, creating at times some suggestive underwater choreography; their bright and gilded colour produce a particular play with the light , given also their imposing number. In Tuscia they are scattered in Lake Bolsena and Marta is one of the many towns that dedicates a festival to the Latterino in May.

POLLAN ROULADE FROM LAKE BOLSENA
Pollan from Lake Bolsena belongs to the Salmonidea family, sub-family, Coregoninae, genus Coregonus. It lives in the sweet waters of Lake Bolsena, has a slender body, crushed, protected by large scales; small head and a slightly oblique mouth.
It has a silvery colour on its back with grey reflections, greenish, blue, more silver on its sides and nearly white on its abdomen. The Pollan has a gregarious nature and it lives between the surface and about 10 metres in depth, however, in relatively fresh water.
Their staple diet is zooplankton and it was introduced in the Lazio basin at the end of ‘800 following the intervention of repopulation carried out by the Ministry of Agriculture.
